They help to prevent an energy wasting heat accumulation behind the refrigerator, and in addition allow easy access for service and maintenance, like the cleaning of the burner, without dismounting the fridge. The lower ventilation grille leads cold air behind the refrigerator while the upper grille allows warm air to escape.
